Hey Colleen, I read in the recipe section somewhere that you like Crockpot Recipes. I tried this one last night and it was awesome!
1 chicken - cut up (I used boneless chicken breasts from Costco) 1 tsp vinigar (I used apple cider vinigar, but regular is okay too) 1/2 cup flour in a bowl with one tsp. salt 3 tbsp. catsup 1 can frozen juice (the recipe said lemonade, but I used mango) 3 tbsp. brown sugar
Dredge chicken in salted flour and brown in a hot skillet. Remove chicken and put in crockpot. Mix the juice, sugar, vinegar and catsup and pour over the chicken. Cook on high for 3 to 4 hours. When ready to serve, remove the chicken to a warm platter and thicken the sauce with 2 tbsp cornstarch mixed with 1/4 cup water, to serve along with the chicken.
I served this last night with rice and a salad, and it was a big hit.
