I promised Colleen I would post this recipe. My granddaughter Madeline made our traditional omelet breakfast on the Sunday of "girl's weekend" and it was absolutely awesome. For the first time ever, she was actually able to sit down and eat with us!!! This is a keeper - especially if you are fixing brekkie for a crowd. It's delicious and definitely will be used again and again. ZIPLOC OMELET (This works great !!! Good for when all your family is together. The best part is that no one has to wait for their special omelet !!!) OMELET IN A BAG
Have guests write their name on a quart-size Ziploc freezer bag with permanent marker.
Crack 2 eggs (large or extra-large) into the bag (not more than 2) shake to combine them.
Put out a variety of ingredients such as: cheeses, ham, onion, green pepper,chopped fresh tomato, salsa, etc. (We added pineapple tidbits to the choices, too).
Each guest adds prepared ingredients of choice to their bag and shake. Make sure to get the air out of the bag and zip it up.
Place the bags into rolling, boiling water for exactly 13 minutes. You can usually cook 6-8 omelets in a large pot. For more, make another pot of boiling water. We used two dutch ovens to do 11 bags.
Open the bags and the omelet will roll out easily onto a plate.
Nice to serve with hash browns, fresh fruit, coffee cake and whatever; everyone gets involved in the process and a great conversation piece.

By the way, there are pictures to show what the omelet in a bag looks like along the way. If you are interested they can be seen on several websites and one of them is www.meninaprons.net/archives/000396.html so have a peek. I would imagine altitude would have some bearing on the length of time the omelet needs to cook. We're at about 950 ft. above sea level and the 13 minute rule worked great for us at Turtle Beach.

Hold that thought. I think I can conger up a few breakfasts in a bag over the four months I will be lazing around Condos Dominicanos. Now that Checkpoint has all this fantastic staff I keep hearing about I may have lost my job as the official hamburgasa flattener. I could have a lot of time on my hands...................and that could be dangerous, very dangerous indeed!!!!!!!!!!!! But fun! Can't wait to see you in December. Now I'm counting sleeps!!

Lazing around!? Losing your job?!? No way! If anything you may well be busier what with having to make all those breakfasts. We will check in 'counting sleeps' to see how few days their is before we see you.

What huh, really, wow the checkpoint is gonna do breaky's yahhhhhhhhhhhhhh lol lol lol sounds good to me eh Colleen!?!?!?!?! Can hardly wait to meet your mom, I was introduced to her last year briefly but am looking forward to meeting her and getting to know her better.
HMM love people in the DR with to much time on their hands. mischief is my second name. yah yah i know its spanky's to but I think I had it first lol ;D
