Take 1 BBQ sized Western Red Cedar plank (about 3/4") and soak it overnight in your backyard fishpond, held down with a peice of B.C. granite. Take 1 tspn of Basil and mix with 3 tblspn Extra Virgin Olive Oil and let stand overnight. Place 1 fillet of B.C. Coho or Chinook Salmon (freshly caught that morning in the cool clear waters of the beautiful coast of B.C.) skin side down on the plank and coat with the Basil mixture. Cook on BBQ over medium heat until the salmon flakes with a fork (about 20 minutes) Open a bottle of Okanagan Merlot and enjoy.

Mac: Planning on bringing me some when you come??? I think I hate you already for pointing out TWO of the things I MISS THE MOST- BC Salmon and BC WIne!!! "CAN YOU SAY RAT BASTARD" ...But seriously, thanks for sharing!!!

And I'm also go to rub it in a little...I'm going home for Christmas. Where you ask is that? Vancouver Island to see my family and to bring my daughter to see her grandfather for the first time. I will enjoy the salmon and many other seafoods and maybe a good BC wine. SORRY!!!

You guys KILL ME! That said, let me remind you that you will be freezing yer butts off this Christmas, while we go to the beach every day, and even if it rains, we won't be cold! WHEW- I HAD to get that off my chest!
PS keep adding recipes- they are, so far, wonderful.

Well, Let see, I moved to Alberta cause I HATE the rain. And this sound sick and maybe I am, but I love the snow...What I really hate is when it starts to get below the -25 degree mark. Above that I can handle it. and you can dress for the cold...how do you cool down after all the clothes been taken off? hehehe
